Simple Rice Salad

Mix a cup of cold cooked rice with some olive oil, garlic, diced tomato, Lebanese cucumber, shredded lettuce, chilli & either diced Holy Smoke Smoked Trout/Smoked Chicken/Portuguese Smoked Chicken.

Warm for a few minutes in the microwave.

Mix through some whole egg mayonnaise for a delicious lunch!
